PREP TIME: 25 minutes
COOK TIME: 20 minutes
SERVES: 2

INGREDIENTS:

  • 4 medium Yukon Gold potatoes
  • 1 small onion, grated
  • 1 egg, beaten
  • Sea salt and black pepper
  • Vegetable oil, for frying

For serving:

  • Sour cream
  • Smoked salmon
  • Red onion, thinly sliced
  • Kaluga caviar

DIRECTIONS:

  1. Prepare the potatoes: Peel the potatoes and grate them using the coarse side of a grater. Place the grated potatoes in a cheesecloth set over a bowl and squeeze out as much liquid as possible.
  2. Form the rosti: Repeat with the onion and add it to the potatoes, along with the egg, salt, and black pepper. Portion the mixture with a 1/3-cup measure and form into round patties. Place on a tray and set aside.
  3. Cook the rosti: Heat the oil in a skillet over medium-high heat and cook the rosti in batches until golden brown and tender in the middle, about 5 minutes per side.
  4. Finish: Transfer the rosti to a paper towel and season with a pinch of salt and black pepper. Top each with a tablespoon of sour cream, smoked salmon, and Kaluga caviar. Garnish with thinly sliced red onion and serve warm.
