A taste from home, found again in America
My name is Dmitri Conradi, and Conradi Caviar began long before I ever wrote a business plan — on the cold shoreline of the Sea of Okhotsk, thousands of miles from where you're reading this now.
I was born in Magadan, in the far east of Russia, to a family of German origin. It is a remote, unforgiving region — and also one of the richest seafood waters on earth, spoken of in the same breath as Alaska. The Sea of Okhotsk has long been famous for salmon, halibut, snow crab, sea scallops, shrimp, herring, pollock, flounder, and cod of exceptional quality. For those of us who grew up there, this abundance wasn't a luxury. It was simply home.
Fishing was part of life — and for me, it was part of childhood. From an early age, my father took me out to the water, teaching me not just how to fish, but how to recognize quality the moment it left the sea.
The Five-Minute tradition
In that part of the world, the most prized salmon caviar wasn't over-processed or treated with anything more than the moment itself. Fishermen cured the roe from freshly caught fish for just five minutes — a method so distinct it earned its own name: Five-Minute cured caviar. No shortcuts. No additives. Just fresh roe, a little salt, and the patience to stop at exactly the right moment.
It is, to this day, some of the finest salmon caviar I have ever tasted. And for years, I searched for something that came close to it in America.
Bringing the standard home
After many years working in the caviar business across the United States, I found what I was looking for in Alaska — a region whose pristine waters and quality of catch echoed the standard I grew up with. I spent years identifying the specific producers whose salmon roe came closest to that Five-Minute tradition: fresh, clean, and honest.
That search shaped the principle I still hold today — our salmon ikura is made with two ingredients only: salmon roe and sea salt. Nothing else. No fillers, no preservatives, nothing to hide behind. Just the quality I was taught to recognize as a child, applied with the same discipline as an adult.
